What Is Vegan Biryani?

Biryani is a layered rice dish traditionally prepared with fragrant basmati rice, aromatic spices, herbs, and a variety of ingredients.

In a vegan version, meat and dairy are replaced with vegetables and plant-based ingredients. The result is a satisfying dish that gets its flavor from spices, herbs, caramelized onions, and flavorful cooking liquid.

The best part? You can easily customize vegan biryani based on the vegetables you have available.

Ingredients for Vegan Biryani

For the rice:

  • 2 cups basmati rice
  • Water for cooking
  • 1 bay leaf
  • 3–4 whole cloves
  • 2–3 green cardamom pods
  • 1 small cinnamon stick
  • Salt to taste

For the vegetable mixture:

  • 2 tablespoons cooking oil
  • 1 large onion, thinly sliced
  • 2–3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 cup carrots
  • 1 cup green peas
  • 1 cup cauliflower
  • 1 cup potatoes, diced
  • 1–2 tomatoes, chopped
  • 1–2 green chilies, optional
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder, or to taste
  • Salt to taste
  • Fresh cilantro
  • Fresh mint

For the coconut yogurt raita:

  • 1 cup unsweetened coconut yogurt
  • ½ cucumber, finely chopped
  • 1 tablespoon fresh cilantro
  • 1 tablespoon fresh mint
  • A pinch of roasted cumin powder
  • Salt to taste
  • A small squeeze of lemon juice

Step 1: Prepare the Basmati Rice

Rinse the basmati rice several times until the water becomes relatively clear. Soak the rice for about 20–30 minutes.

Bring a large pot of salted water to a boil. Add the whole spices and soaked rice.

Cook the rice until it is partially cooked but still firm. Drain and set aside.

The rice will finish cooking later when the biryani is steamed, so avoid overcooking it at this stage.

Step 2: Cook the Vegetables

Heat oil in a large, heavy-bottomed pot.

Add the sliced onions and cook until golden brown. Remove some of the onions and reserve them for garnishing.

Add ginger, garlic, and green chilies to the remaining onions. Cook for a minute or two until fragrant.

Add the carrots, peas, cauliflower, potatoes, and tomatoes. Stir in cumin, turmeric, garam masala, chili powder, and salt.

Cook until the vegetables are tender but still have some texture.

Step 3: Layer the Biryani

Now comes the fun part.

Spread a layer of the cooked vegetable mixture across the bottom of the pot. Add a layer of partially cooked basmati rice.

Top with fresh mint, cilantro, and some of the reserved crispy onions.

Repeat the layers until all the ingredients have been used.

Cover the pot tightly with a lid.

Step 4: Steam the Biryani

Place the pot over low heat and allow the biryani to steam for approximately 15–20 minutes.

This final steaming step allows the rice to finish cooking while absorbing the flavors of the vegetables and spices.

Once finished, turn off the heat and let the biryani rest for several minutes before opening the lid.

Gently fluff the rice with a fork to avoid breaking the grains.

Step 5: Make Coconut Yogurt Raita

While the biryani is steaming, prepare the raita.

Add coconut yogurt to a bowl and stir until smooth.

Mix in chopped cucumber, cilantro, mint, roasted cumin powder, salt, and lemon juice.

Taste and adjust the seasoning as needed.

The cool, creamy raita provides a refreshing contrast to the warm and aromatic biryani.

Tips for Better Vegan Biryani

Use Good-Quality Basmati Rice

Long-grain basmati rice helps create the light, fluffy texture that makes biryani so appealing.

Don’t Overcook the Rice

Partially cooking the rice before layering is important. Overcooked rice can become soft and mushy during the final steaming process.

Don’t Skip the Herbs

Fresh mint and cilantro add brightness and freshness to the dish.

Add More Vegetables

You can customize your biryani with bell peppers, green beans, mushrooms, spinach, or other vegetables.

Adjust the Spice Level

If you’re cooking for children or guests who prefer mild food, reduce the amount of chili. For extra heat, add more green chili or chili powder.

What to Serve With Vegan Biryani

Coconut yogurt raita is a natural pairing, but you can also serve vegan biryani with:

  • Fresh salad
  • Cucumber and tomato salad
  • Mango chutney
  • Mint chutney
  • Lemon wedges
  • Roasted vegetables

A simple side can complement the spices without overpowering the biryani.

Can You Make Vegan Biryani Ahead of Time?

Yes. Vegan biryani can be prepared ahead of time and reheated when you’re ready to serve.

Store leftovers in an airtight container in the refrigerator and reheat thoroughly. Add a small splash of water before reheating if the rice has dried out.

For larger gatherings, preparing the ingredients ahead of time can make serving much easier.
