What Is Chole Kulche?

Chole Kulche is a popular North Indian street food made with tender chickpeas cooked in aromatic spices and served with soft, mildly tangy flatbread called kulche. Often garnished with fresh onions, cilantro, green chilies, and a squeeze of lemon, this classic combo delivers a delicious balance of spice, tanginess, and texture.

Ingredients for Chole

  • 2 cups boiled chickpeas
  • 1 finely chopped onion
  • 2 chopped tomatoes
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons cooking oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon chole masala
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro and lemon juice for garnish

How to Make Chole Kulche

Step 1: Prepare the chickpeas

Soak dried chickpeas overnight and boil until tender, or use canned chickpeas for a quicker preparation.

Step 2: Make the masala

Heat oil in a pan and add cumin seeds. Add chopped onions and sauté until golden. Stir in ginger-garlic paste and cook until fragrant.

Step 3: Add tomatoes and spices

Add tomatoes, turmeric, red chili powder, coriander powder, chole masala, and salt. Cook until the tomatoes soften and the spices blend into a rich masala.

Step 4: Cook the chole

Add boiled chickpeas and a little water. Simmer for 15–20 minutes, gently mashing a few chickpeas to create a thick, flavorful gravy.

Step 5: Warm the kulche

Heat the kulche on a skillet until soft and lightly golden. Brush with butter if desired for extra flavor.

Step 6: Serve and enjoy

Serve hot chole with warm kulche, chopped onions, fresh cilantro, green chilies, and lemon wedges for the ultimate street food experience!

Tips for Restaurant-Style Chole Kulche

  • Use freshly ground spices for a richer aroma.
  • Let the chickpeas simmer long enough to absorb the masala.
  • Add lemon juice just before serving for a refreshing tang.
  • Serve the kulche warm for the best taste and texture.
